Orange Wine Viognier Reserva

Varietal Composition: 100% Viognier

Vinification: Grapes were handpicked and immediately processed, de-stemmed, crushed and chilled at 8°C for cold maceration into stainless steel tanks.  Fermentation during 22 days totally on the skins at controlled temperature. No malolactic fermentation, cold tartaric stabilization for 1 week before finishing and bottling.

Tasting Notes: Yellow color, bright, nice complex aroma of flowers (including dry) on the palate shows great complexity, full bodied, long finish.

Alcohol: 12,5%

Orange Wine Pedro Ximenez Reserva

Varietal Composition: 100% Pedro Ximenez

Vinification: The grapes are handpicked and immediately translated at the winery, destemmed and crushed, chilled for 3 days, cold maceration and then inoculated with special yeast. Fermentation for 18 days completely on the skins with “pisage” with piston. Cold tartaric stabilization before bottling well protect from oxygen.

Tasting Notes: The wine shows a nice yellow color, brilliant; on the nose is floral and persistent; on the palate has a very good structure with nice fruit, good texture with a bit of tannins on the finish good balance.

Alcohol: 13%

Moscato Giallo

Varietal Composition: 100% Moscatel Amarilla

Vinification: Grapes are coming from Don Aldo Olivier family vineyards, which are located just in front of the winery. Altitude is approx. 600 m and climate conditions are dry; Elqui is the southern border of Atacama Desert and at the present it is the driest desert in the world.    Juice fermented at low temperature in stainless steel tanks. Aging on the fine lees before finishing and bottling.         The origin of the grapes is from Italy (Moscato Asti family), but quite popular in the region. Production is quite important because Chile started producing sparkling wine in a considerable volume.

Tasting Notes: The wine is very aromatic with floral nose (roses), medium body with fresh and fruity aromas (apricot). Balanced acidity with a tiny sugar residual content.

Moscatel Rosada late harvest

Varietal Composition: 100% Moscatel Rosada

Vinification: Grapes are softly de-stemmed, crushed and gently pressed with pneumatic press. The juice is naturally clarified and then fermented in stainless steel tanks for 20 days at low temperature with selected yeast. Fermentation is stopped when alcohol reaches approx. 11.5% and residual sugar approx. 60 g/l . The wine is clarified to reach protein stability and then stabilized through cold tartaric stabilization.

Tasting Notes: Brilliant rich yellow color. Nice aroma of peaches and apricots on the nose. Medium body, nice balance between sugar and acidity.

Rose

Varietal Composition: 85% Viognier y 15% Syrah

Vinification: All the grapes are produced in El Tambo – Elqui Valley at 640 mt above sea level. Grapes were harvested by hand in small bins of 15 kg. Transported to the winery and pressed together immediately. Clarification of the must by natural sedimentation in stainless steel tanks at low temperature for 48 hrs. Fermentation took place at temperatures of 15/16 degrees with selected yeast. Then the wine has been stored on the fine lees for 4 months to have better texture and complexity,cold stabilization before bottling.

Tasting Notes: Pale rose color (like onion skin), bright, delicate aroma, fresh, and a bit aromatic and floral; Good texture, elegant, balanced acidity and fruity in the mouth with creamy notes.

Sauvignon Blanc Reserva

Sauvignon Blanc Reserva

Varietal Composition: 100% Sauvignon Blanc

Vinification: Grapes were immediately pressed (without crushing first), and cold macerated for 24/36 hours at low temperature. The juice was clarified, stored on the lees for 72 hours then fermented in stainless steel tanks at temperature between 15-16ºC. Aging on the fine lees for 4/5 months with battonage and then blended, before finishing and bottling.

Tasting Notes: Brilliant yellow color. Nose is intense reminiscent of figs, elderflowers, grapefruits and sage. Good character (citrus and melon notes), acidity and long crisp finish on the palate – very opulent wine.

Alcohol: 13%

Pedro Ximenez Reserva

Varietal Composition: 100% Pedro Ximenez

Vinification: Grapes are softly pressed without crushing first. The juice has been clarified by natural sedimentations and fermented in stainless steel tanks at 15/16°C with selected yeasts. At the end of fermentation, the wine is racked and aged in stainless steel tanks at low temperature on the fine lees for at least 4 months. No malolactic fermentation. Cold tartaric stabilization at -4°C before bottling.

Tasting Notes: Pale straw yellow in color, attractive nose floral and tropical fruit flavors, medium body with balance of acidity and minerality, coupled with a long, crisp and refreshing finish.

Pedro Ximenez Reserva
Viognier Reserva

Viognier Reserva

Varietal Composition: 100% Viognier

Vinification: Vineyards are located close to El Tambo village very close to Falernia winery at 600mt altitude. Grapes are handpicked in small bins and placed into the pneumatic press as whole bunches and macerated for a few hours. The juice is extracted with low pressure and fermented in stainless steel tanks with selected yeast and low temperature. After fermentation the wine is racked into a new tank and stored on the fine lees for five months before finishing and bottling.

Tasting Notes: Pale yellow in color, very floral and slightly aromatic on the nose. On the palate it’s rich, fresh, balanced with nice minerality and long finish.

Riesling Reserva

Varietal Composition: 100% Riesling

Vinification: Grapes are de-stemmed, cold macerated for a few hours at a very low temperature and then fermented in stainless steel tanks at 13-14ºC with selected yeasts. After the fermentation the wine is aged on the fine lees for at least 4 months in order to get more complexity and character. Finishing with cold tartaric and protein stabilization before blending and bottling.

Tasting Notes: The wine has an aromatic floral nose, medium body with nice minerality and long length, very persistent, with small sugar residual.

Chardonnay Reserva

Chardonnay Reserva

Varietal Composition: 100% Chardonnay

Vinification: Grapes are de-stemmed, crushed and placed in a pneumatic press, where they are cold macerated for 12 hours at 8ºC. The juice is extracted at low pressure, clarified and fermented partially in stainless steel tanks at 12-14ºC and partially in French oak barrels with selected yeasts, afterwards, left in the barrels to mature for around 6 months. When the barrel fermented wine is racked, the barrels are filled with stainless steel fermented wine, which is then matured for 3 months.

Tasting Notes: Rich yellow in color, floral on the nose with banana, pineapple, papaya and spicy aromas. Full and round with fine acidity and long finish.

Alcohol: 13%

Carmenere Reserva

Varietal Composition: 100% Carmenere

Vinification: Grapes are de-stemmed and crushed. Fermentation takes place in stainless steel tanks at 22-24ºC (79-82ºF) with enzymes for color extraction and selected yeasts; 100% malolactic fermentation. 70% is aged in stainless steel tanks and 30% in French and American oak barrels for 4 month to give complexity to the wine’s character. After blending the wine is clarified, gently filtered and bottled.

Tasting Notes: Deep red in color, dark chocolate and vanilla on the nose; full bodied, rich, with ripe and complex tannins on the palate.

Varietal Composition: 100% Merlot

Vinification: The grapes were harvested by hand in trays of 15kg, destemmed and gently crushed. The

fermentation took place in stainless steel tanks, after malolactic fermentation the wine was

partially aged in French oak barrels for 6 months.

Tasting Notes: ​Deep and brilliant color, rich red berries aromas with hints of mint and vanilla. Full bodied with

soft tannins and long finish.

Alcohol: 14%

Sangiovese Reserva

Varietal Composition: 100% Sangiovese

Vinification: Grapes are fermented in stainless steel tanks with selected yeasts. After full malolactic fermentation the wine is partially aged in French oak barrels for 4 months.

Tasting Notes: Deep in color, red cherry character, soft tannins, well balanced. It is an easy drinking red wine, but with good acidity.

Varietal Composition: 100% Cabernet Sauvignon

Vinification: Grapes are de-stemmed and crushed. Fermentation takes place on the skins in stainless steel tanks with pistons at 22-24ºC (79-82ºF) with selected yeasts; breaking the cap 4-6 times a day for the first week. After malolactic fermentation, 40% of the wine is matured in French and American oak barrels and 60% in stainless steel tanks for 4 months. After blending the wine is clarified, gently filtered and bottled.

Tasting Notes: Bright and deep in color, aromas of red fruit and spices on the nose. On the palate it is full bodied with chocolate, mint, green pepper and vanilla notes.

Syrah Reserva

Varietal Composition: 100% Syrah

Vinification: Grapes are de-stemmed, crushed and cold macerated for 72 hour at 10ºC. Fermentation takes place on the skins in stainless steel tanks with pistons at 20-22ºC, breaking the cap 3-4 times a day for the first week with pistons only. After the malolactic fermentation, 30% of the wine is matured in French and American oak barrels for 5 months.

Tasting Notes: Bright and deep in color. On the nose, red fruit, black pepper, meaty and spicy aromas. On the palate it is full bodied, dark fruit flavors and a spicy, peppery, gently smoked leather notes in the aftertaste.

Syrah Reserva
Pinot Noir Reserva

Pinot Noir Reserva

Varietal Composition: 100% Pinot Noir

Vinification: Grapes are harvested by hand, de-stemmed and gently crushed, and then fermented in stainless steel tanks with piston above for pushing down the cop. After the alcoholic fermentation, 30% of the wine is aged in French oak barrels for 6 months.

Tasting Notes: Black cherries and strawberry notes, very elegant tannins, nice fruit character on the palate with long finish.

Alcohol: 13,5%

 

Carmenere Gran Reserva

Varietal Composition: 100% Carmenere with 60% “Appassimento” grapes.

Closure: Traditional cork only

Vinification: 60% of the grapes are picked late, after 2 more months on the vines. Fermentation followed by aging in Premium American oak (60%) for 8/10 months.

Tasting Notes: Brilliant and deep inky violet color. Nose is very intense and fruity with vanilla and white chocolate notes. The wine shows incredible softness in the mouth with velvety structure.

Carmenere Syrah Gran Reserva

Varietal Composition: 60% Carmenere y 40% Syrah

Vinification: This blend is made 20% from Carmenere “Appassimento” grapes. Each variety is hand-picked, de-stemmed and crushed separately. The winemaking is the same as for single varietal Carmenere and Syrah wines. After fermentation 40% of the volume is aged in French and American oak barrels and the rest in stainless steel tanks for 6 to 8 months, and then blended just 3 months before bottling

Tasting Notes: Bright and deep color. The wine shows a good fruit concentration and on the nose black pepper, red fruit and dark chocolate. Great body with soft tannins on the palate.

Vinification: Traditional Syrah winemaking. After de-stemming, crushing and cold macerating for 72 hours, fermentation takes place at 22-24 ºC (74-75 ºF) on the skins in stainless steel tanks with pistons breaking the cap 4-6 times a day for the first week. After full malolactic fermentation 60% of the volume is aged in French oak barrels for 6 to 8 months.

Tasting Notes: Bright purple in color; elegant nose with black pepper and floral notes. It is full bodied, well balanced with very soft tannins, spicy and nice fruit character.

Vinification: The grapes were harvested by hand in trays of 15kg, destemmed and cold macerated. The fermentation took place in stainless steel tanks with pistons that simulate the traditional “pisage” method. The wine was aged in French and American oak barrels for 10 months.

Tasting Notes: Dark red in color, rich black cherry aromas with hints of mint and vanilla. Full bodied, soft on the palate with a long finish.

Sangiovese Gran Reserva

Vinification: We have carefully selected only the best brunches of our TITON Vineyard planted 20 years ago. Vinification took place in stainless steel tanks with pistons for 20 days at controlled temperature. After that full malolactic and aging 20% of the volume in French oak barrels and the balance in stainless steel tanks.

Tasting Notes: The wine shows a brilliant red color, not too dark as Sangiovese it is. The nose is very varietal with a lot of fruit and a touch of oak. On the palate vibrant tannins, nice acidity, very clean fruit character and long finish.

Vinification: Made from grapes carefully selected from our Titon Vineyards. The grapes are cold macerated and then softly pressed. Fermentation takes place in stainless steel tanks at 15-16°C. After fermentation the wine is stored on the fine lees for about 6 months and then blended and bottled.

Tasting Notes: Sauvignon Blanc is pale straw in color, the aroma is intense, with ripe tropical fruits, elderflowers and citrus notes. The palate is crisp and refreshing with a good complexity, gooseberry and melon flavors.

Vinification: Grapes have been hand-picked, gently crushed and cold macerated for 3 days before fermentation that took place in stainless steel tanks at controlled temperature for about two weeks. Those tanks are equipped with particular pistons on top for punching down the cap into the juice. After malolactic, 40% of the wine has been matured in French oak for 6/8 months, before blending and finishing.

Tasting Notes: Ruby red color, nose of red fruit and blackberry, spicy, full bodied with soft tannins.

Vinification: Grapes are de-stemmed, crushed and fermented in stainless steel tanks equipped with pistons in order to simulate the traditional method of hand-punching down the skins as they are driven to the surface. After malolactic fermentation 30% of the wine is aged in French oak barrels for 8 months before blending, finishing and bottling

Tasting Notes: Deep purple-red in color. Aromas of rose petals, violets and white pepper on the nose. Bright on the palate with succulent blackberries and spiced game finish. Lush and very pure

Vinification: Hand-picked grapes from a cool climate TITON vineyard, slowly fermented in French and American oak barrels and matured on the fine lees for 10 months before blending, finishing and bottled.

Varietal Composition: 100% Pinot Noir

Vinification: Grapes are hand harvested from TITON vineyard which is in the coolest part of the valley at 350 mt. altitude. Granite soils with a bit of clay; the grapes are de-stemmed and gently crushed, and then fermented in stainless steel tanks of 1500 liters with manual pigeage. After the alcoholic fermentation 100% is aged in French oak barrels (new and 2-3 years old) for 10 months to complete malolactic fermentation and aging on the fine lees.

Tasting Notes: This wine is a great example of Pinot Noir in an Old World Style, but made with New World fruit. The wine has a delicate aroma of black cherry, with well-integrated French oak. Medium bodied wine with soft tannins on the palate.

Syrah Gran Reserva Titon Single Vineyard

Vinification: Grapes are carefully selected, gently crushed and cold macerated for 3 days before fermentation in stainless steel tanks. After full malolactic fermentation, the wine is aged in Premium French oak barrels for 12 months before finishing and bottling.

Varietal Composition: 100% Carmenere

Vinification: Grapes are delivered for processing within minutes. The grapes are carefully sorted, gently crushed and cold macerated for 3 days. After full malolactic fermentation, the wine is aged in new American oak barrels for 12 months before finishing and bottling.

Tasting Notes: Brilliant dark red color; on the nose, red fruit and elegant toasted vanilla notes; big cut on the palate but very balanced structure nonetheless, with very ripe tannins.

Alcohol: 14,5%

Number One Single Vineyard

Varietal Composition: 50% Cabernet Sauvignon 25% Syrah 25% Carmenere

Closure: Traditional cork only

Vinification: Grapes are harvested, de-stemmed and gently crushed, and then cold macerated for 48 hours at 10ºC for fruit aroma extraction. Fermentation takes place at 22-24ºC for 10 days, then another week of maceration after fermentation. Afterwards, the wine undergoes through full malolactic fermentation in stainless steel tanks. All the wines are matured separately for 12 months – Cabernet Sauvignon and Syrah in French oak barrels and Carmenere in Premium American oak barrels. Before bottling, the wine is blended and rested in stainless steel tanks for 3 months.

Tasting Notes: Deep ruby color, clear nose of red berries, vanilla and chocolate. Full bodied on the palate, good red fruit character, a blend of pepper, white chocolate and vanilla.
